Cookie Dough
- 100 ml whipping cream
- 250 g white chocolate
- 175 g Maria biscuits
- 75 g pistachios
- 100 g pistachio paste
Topping
- 250 g white chocolate
- 100 g pistachio paste
- 30 g pistachios
Garnish
- Pistachios
- Rose petals (edible)
Instructions
- Heat the whipping cream in a saucepan until almost boiling. Add the broken white chocolate and let it sit for 1 minute. Then, mix until smooth.
- Grind the Maria biscuits into fine crumbs using a food processor.
- Coarsely grind the pistachios using a food processor.
- In a deep bowl, combine the biscuit crumbs, chopped pistachios, pistachio paste, and white chocolate ganache. Mix into a cookie dough.
- Spread the cookie dough into a springform pan lined with parchment paper. Press firmly and refrigerate until firm.
- Cut the cookie dough into rectangles or desired shapes.
- Melt the white chocolate using a double boiler. Add the pistachio paste and chopped pistachios. Mix well.
- Dip the pistachio cookies one by one into the chocolate-pistachio mixture.
- Place the cookies on a sheet of parchment paper. Garnish with ground pistachios and rose petals.
