Cheesy Ranch Chicken Foil Packets

Aluminum foil packets, also known as aluminum foil dinners, are the perfect summer meal. You can prepare them ahead of time and cook them when they’re ready. They can be cooked in the oven, on the grill or even over an open fire, making them perfect for camping. You know those barbecue grills you have in the backyard? These are perfect too! This recipe is all about the sauce. This delicious ranch dressing tenderizes the meat and adds a wonderful flavor to the chicken and vegetables. And who doesn’t love ranch dressing? It’s a classic flavor combination for good reason.

Ingredient Notes

  • chicken breast: This is a very simple option and requires no trimming. You can use chicken thighs if you prefer, but thighs take longer to cook.
  • Red potatoes: Make sure to cut them into thin slices so they cook at the same rate as the chicken. If they are too large, you will end up with crunchy, partially raw potatoes.
  • Other vegetables: You can mix the vegetables as you like. You can use zucchini, carrots, or even whole garlic cloves in a foil bag.
  • sauce: All of these ingredients play an important role in making the perfect sauce.
  • Parmesan cheese: It adds a nice salty flavor, but you can substitute cheddar or mozzarella cheese.

Types of potatoes

Red and gold potatoes with thin, edible skins are best for foil bags. When using potatoes, be sure to cut them into thin slices so they cook at the same rate as chicken. Alternatively, you can also cut them into 1/2-inch cubes. If you leave the potato pieces too large, you’ll end up with crunchy, partially raw potatoes, which no one likes.

Place over hot coals and cook for 20-30 minutes, turning once halfway through, until meat is cooked through and vegetables are tender.

Storage and reheating instructions
