Pistachio Cheesecake


For the Crust:

  • 2 cups of graham cracker crumbs
  • 1/4 cup of sugar
  • 1/2 cup of unsalted butter, melted

For the Filling:

  • 3 packages (8 ounces each) of cream cheese, softened
  • 1 cup of sugar
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 1 cup of shelled pistachios, finely ground
  • 1 cup of heavy cream
  • 1 package (3.4 ounces) of instant pistachio pudding mix

For the Topping:

  • 1 cup of heavy cream
  • 2 tablespoons of powdered sugar
  • 1/2 teaspoon of vanilla extract
  • 1/4 cup of chopped pistachios for garnish


  1. Prepare the Crust:

    • Preheat your oven to 325°F (160°C).
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well-coated.
    • Press the mixture firmly into the bottom of a 9-inch springform pan.
    • Bake for 10 minutes, then set aside to cool.
  2. Prepare the Filling:

    • In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
    • Add the eggs, one at a time, beating well after each addition.
    • Mix in the vanilla extract and ground pistachios until well combined.
    • In a separate bowl, whisk together the heavy cream and instant pistachio pudding mix until thickened.
    • Fold the pudding mixture into the cream cheese mixture until fully combined.
  3. Bake the Cheesecake:

    • Pour the filling over the cooled crust in the springform pan.
    • Smooth the top with a spatula.
    • Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly golden.
    • Turn off the oven and leave the cheesecake inside with the door slightly open for about 1 hour to cool gradually.
    • Remove from the oven and refrigerate for at least 4 hours, or overnight, to set completely.
  4. Prepare the Topping:

    • In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
    • Spread the whipped cream over the top of the chilled cheesecake.
    • Sprinkle with chopped pistachios for garnish.
  5. Serve:

    • Carefully remove the sides of the springform pan.
    • Slice and serve the pistachio cheesecake chilled.
