Cookie Dough

  • 100 ml whipping cream
  • 250 g white chocolate
  • 175 g Maria biscuits
  • 75 g pistachios
  • 100 g pistachio paste

  1. Heat the whipping cream in a saucepan until almost boiling. Add the broken white chocolate and let it sit for 1 minute. Then, mix until smooth.
  2. Grind the Maria biscuits into fine crumbs using a food processor.
  3. Coarsely grind the pistachios using a food processor.
  4. In a deep bowl, combine the biscuit crumbs, chopped pistachios, pistachio paste, and white chocolate ganache. Mix into a cookie dough.
  5. Spread the cookie dough into a springform pan lined with parchment paper. Press firmly and refrigerate until firm.
  6. Cut the cookie dough into rectangles or desired shapes.
  7. Melt the white chocolate using a double boiler. Add the pistachio paste and chopped pistachios. Mix well.
  8. Dip the pistachio cookies one by one into the chocolate-pistachio mixture.
  9. Place the cookies on a sheet of parchment paper. Garnish with ground pistachios and rose petals.
