The making of this cake does not require an oven.
Ingredients
Cookie Dough
- 154g Oreos (1 package of Oreos)
- 175g chocolate chip cookies
- 85g unsalted butter
Peanut Mixture
- 50ml water
- 125g granulated sugar
- 150ml whipping cream
- 50g unsalted butter
- 125g unsalted peanuts
Cheesecake Batter
- 200g cream cheese
- 250g mascarpone cheese
- 16g cream stiffener (klopfix)
- 30g granulated sugar
- 8g vanilla sugar (1 packet)
- 400ml whipping cream
Topping
- 75ml whipping cream
- 100g milk chocolate
Instructions
Cookie Dough
- Grind Oreos and chocolate chip cookies in a food processor.
- Melt butter and mix with ground cookies until cohesive.
- Press the mixture into a baking pan and refrigerate.
Peanut Mixture
- Boil water and sugar until golden brown.
- Add whipping cream and butter, stirring until smooth.
- Mix in chopped peanuts and let it cool.
Cheesecake Batter
- Mix cream cheese, mascarpone, cream stiffener, sugars, and whipping cream until stiff.
- Layer one-third of the batter over the cookie base, add half of the peanut mixture, and repeat layers, ending with cheesecake batter.
Topping
- Heat whipping cream, add chocolate, and mix until smooth.
- Spread ganache over the cheesecake and refrigerate until firm.
Serving
- Slice the cheesecake and garnish with cream, caramel, and chopped peanuts.
Tips
- Let the cheesecake set overnight.
- Adjust sugar to taste and substitute ingredients as needed.
