  • 12 slices of bread

Chicken Mixture

  • 35ml olive oil
  • 450g chicken thighs
  • 2g cayenne pepper powder (⅔ teaspoon)
  • 2g cumin powder (⅔ teaspoon)
  • 3g garlic powder (1 teaspoon)
  • 2g paprika powder (⅔ teaspoon)
  • 1g Italian seasoning
  • 1 chicken stock cube
  • 150g yellow onion (1 yellow onion)
  • 75g red bell pepper (half a red bell pepper)
  • 75g green bell pepper (half a green bell pepper)
  • 50g green olives
  • 80g cheese


  • Mayonnaise
  • Algerienne sauce
  • Cheddar cheese


  • Cream cheese (in a tub)
  • Grated cheese
  • Tomato


Chicken Mixture

  1. Wash the chicken thighs and cut into pieces.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add the chicken, cayenne pepper powder, cumin powder, garlic powder, paprika powder, and Italian seasoning. Crumble the chicken stock cube over the pan.
  4. Mix well and cook for 3-4 minutes.
  5. Add the yellow onion, red bell pepper, green bell pepper, and green olives. Cook for another 4-5 minutes.
  6. Add the cheese and mix well.

Assembling the Bread

  1. Spread the slices of bread on a baking sheet lined with parchment paper.
  2. Spread a layer of mayonnaise on the bread slices.
  3. Distribute the chicken mixture on top.
  4. Place a slice of cheddar cheese on each, followed by the Algerienne sauce.
  5. Cover with another slice of bread.
  6. Top the bread with a layer of cream cheese, grated cheese, and slices of tomato.
  7. Place in a preheated oven at 200°C (392°F).
  8. Bake for 10 minutes, or until the bread is nicely golden brown.


  1. Remove from oven and serve hot.


  • Replace the chicken thighs with chicken breast.
  • Recipe yields 6 rolls. Adjust baking time to 25 minutes if necessary.
